Fried Bruschetta

Ingredients
Olive oil
Clove of peeled garlic
2 large slices of good quality bread
1/2 cup purred cooked cannelini beans
Salt and freshly ground black pepper
Chopped fresh fennel or slivers of roasted red peppers
Directions
- Heat some olive oil in a skillet and fry the bread with the garlic. Spread the fried read with pureed beans, season with salt and pepper, drizzle on more olive oil and garnish with chopped fresh fennel or pepper.
