Frozen Peanut Butter Drink

This drink reminds Molly of going to the mall with her mom and getting some kind of frozen coffee drink, but then just eating the whipped cream and chocolate sprinkles off the top. She wanted to make this one caffeine-free and kid-friendly, so she’s swapping out the coffee and re-creating that memory with peanut butter instead! Slurp!

Ingredients

Oat Milk Ice Cubes:

2 cups (480 grams) cold, unsweetened plain oat milk

Whipped Cream:

1 cup (240 grams) heavy cream

2 tablespoons confectioners’ sugar

Frozen Peanut Butter Drink:

2 cups (480 grams) cold, unsweetened plain oat milk

1/2 cup (125 grams) creamy natural, no-stir peanut butter

3 tablespoons (38 grams) light brown sugar

1/4 teaspoon ground cinnamon

1/4 teaspoon vanilla extract

Dark or milk chocolate bar, for shaving

Maraschino cherries, for topping

Directions

  1. For the oat milk ice cubes: Pour the oat milk into an ice cube tray and freeze until frozen, at least 6 hours.
  2. For the whipped cream: In a large mixing bowl, add the heavy cream and confectioners' sugar. Using a hand mixer (or whisk by hand), beat on medium speed until soft peaks form, about 1 minute. Set aside or keep chilled in the refrigerator.
  3. For the frozen peanut butter drink: Into the carafe of a high-speed blender, add the oat milk, peanut butter, brown sugar, cinnamon and vanilla extract. Blend until smooth. Add the oat milk ice cubes and blend until smooth and frothy.
  4. Divide the frozen beverage among 3 to 4 glasses. Top with the whipped cream, chocolate shavings and a maraschino cherry. Insert a straw and serve immediately.
