Ingredients

2 (8-ounce) packages Halloumi cheese

Extra-virgin olive oil, for brushing

1 teaspoon paprika

1 teaspoon dried thyme

Directions

  1. Soak 8 wooden skewers in water while you heat the grill to medium heat.
  2. Cut each Halloumi into 4 pieces measuring approximately 1-inch-by-3-inches. Insert the soaked skewers into the pieces and put them onto a platter. Drizzle with olive oil and sprinkle with the paprika and thyme, turning them over to coat the cheese on all sides.
  3. Grill the cheese about 2 to 3 minutes per side, until they have nice grill marks and are warmed through. Serve immediately.
  4. Halloumi can also be prepared the same way, without the skewers, and cooked in a nonstick skillet over medium heat for 2 to 3 minutes per side.

The recipe is very good and I like the use of the skewers. I actually though prefer the Greek oregano instead of thyme. <br />To nikkicassis_790658 I have to say you are wrong. The real Halloumi may originate from the Middle East, but it is made in Pafos on Cypros (so it is not Greek either. Cypros is a stone throw away from Lebanon so I can understand if the origin was from that part! Wow, I just noticed that your writing was from 2007 so you had to wait quite a while for this.
