Giant Garlic-Cilantro Toasts

Ingredients

1/2 cup (1 stick) chilled unsalted butter, diced

2 tablespoons grated Parmesan

3/4 teaspoon kosher salt

3/4 teaspoon freshly ground black pepper

Large pinch cayenne pepper

3 cloves garlic, peeled and crushed

1/2 cup (packed) chopped fresh cilantro

1 green onion, chopped

1 pain rustique loaf of bread

Directions

  1. Place the butter, cheese, salt, black pepper, cayenne pepper and garlic in a processor. Process until well blended, scraping down the sides of the bowl occasionally. Add the cilantro and green onions. Process with on/off turns until just combined (do not puree the cilantro or onion).
  2. Preheat the oven to 375 degrees F.
  3. Cut the bread crosswise into as many slices as needed, each should be 1/2-inch thick and 7 to 8 inches long. Arrange the bread slices directly on the oven rack. Bake until the slices are crusty outside but still soft inside, 10 to 12 minutes. Transfer the bread to a large rimmed baking sheet. Spread 1 tablespoon of the seasoned butter on each slice. Bake the toasts until very hot and crisp, 10 to 12 minutes. Serve hot.
