Sweet Butter Toasts

Ingredients

3 tablespoons sugar

1 teaspoon ground cinnamon, optional

2 tablespoons butter

8 (1/2-inch thick) slices ciabatta bread

Directions

  1. Mix the sugar and cinnamon in a small bowl, if desired. Melt the butter on a heavy griddle over medium heat. Coat both sides of the bread slices with the melted butter on the grill and arrange on grill. Sprinkle with sugar. Once bread has nice grill marks, about 2 minutes, flip over and grill the sugared side for 2 minutes until caramelized. Transfer the toasts to a plate, sugar side up. Cool slightly, then cut diagonally in half. Eat toasts sugared side down.

When giada made this on the network, she used a grill pan. The recipe says griddle, then talks about grill marks. Confusing. I used a grill pan and it was a problem. The butter melts between the ridges, doesn't make good contact with the bread, burns and smokes. I think it will be better to butter the bread instead of the pan. Otherwise, the caramelizing of the cinnamon sugar on the ciabatta was fabulous and unusual and got raves.
