Goose Crackling

Ingredients

Skin and fat from goose

2 cups water

Directions

  1. Cut fat and skin into 1-inch wide strips and a few inches long. Place the fat in a hot pan and sprinkle with salt. Add the water and skim the foam that rises to the top. Boil until the water is completely evaporated.
  2. Strain the goose fat and reheat the pan to a medium high heat. Stir fry the fat strips for about 10 minutes, until golden brown. Remove and strain on paper towels.
