Grand-Ma-Ma's Spaghetti Sandwiches

Ingredients

1 cup leftover cold spaghetti (with the sauce mixed in it)

2 tablespoons olive oil

2 whole eggs, beaten with salt and pepper

1/4 cup grated Parmesan cheese

sandwich bread and butter

Directions

  1. Turn on the oven broiler to high. Put the rack 10cm from the heat. Put the olive oil in a non-stick fry-pan on medium heat. Add the leftover spaghetti. Turn with a wooden spoon until the spaghetti is warmed. Pour on the eggs and cook for 30 seconds. Sprinkle the cheese over and slide the pan under the broiler. Broil until the eggs are firm and the frittata is lightly browned on top. Slice out onto on to a plate. To serve pile a few slices of the frittata on your favorite bread.

We always had spaghetti sandwiches when we were growing up. Always with leftover spaghetti. My mom use to make them like this recipe but sometimes she wouldn't add the egg. Today I still make spaghetti sandwiches for my kids and they love them as well. I just heat the leftover spaghetti in the microwave and spread between two pieces of fresh buttered bread and add a slice of mozzarella or provolone. Eggs are added only as a special treat. Always a treat.
