Greek Style Wrap with Tzaziki Sauce

Ingredients

Lavash (a damp middle eastern style bread)

Red pepper, julienned

Cucumber, julienned

Medium size eggplant sliced into 1-inch wide slices, roasted until lightly browned

Tzatziki sauce, recipe follows

TZAZIKI SAUCE:

1 1/2 cups yogurt cheese, with liquid reserved

1 tablespoon minced garlic

2 tablespoons lemon juice

3 tablespoons chopped dill

Salt and pepper to taste

Directions

  1. Layer red pepper, cucumber and eggplant in lavash. Top with tzatziki sauce.

TZAZIKI SAUCE:

  1. In a bowl combine yogurt cheese, garlic, lemon juice and dill. Add salt and pepper to taste. Depending on desired consistency, add reserved yogurt liquid.

This recipe is a great start for those just getting into ethnic cooking. But I was disappointed that this recipe is missing any meat which most Greek food has. If you do use this recipe, my suggestion is to get a strip steak. Cook it well and then slice. Also take an onion and add that with the red pepper. The eggplant can stay if your a fan of it. If you're not, then don't use it in this recipe. <br />The Tzaziki needs some help too. Instead of putting the cucumber in the filling at all, I would grate 1/2 cup of it and put it in the Tzaziki. It adds much needed flavor with the garlic and dill to the yogurt.
