Grilled Bone-In Pork Chops

Ingredients

2 to 3 rosemary sprigs, stems removed and leaves coarsely chopped

Kosher salt and freshly ground pepper

1 Granny Smith or other crisp apple, cored and seeded

2 center-cut bone-in pork chops (about 3/4-inch thick)

4 tablespoons extra-virgin olive oil

Directions

  1. Prepare a grill for high heat. Whisk together the oil, rosemary and a pinch each of salt and pepper. 
  2. Slice the apple horizontally into 1/4-inch-thick slices; brush the slices with the oil mixture and grill, covered, until grill marks appear about 1 minute per side. 
  3. Brush the chops with the oil mixture and grill, covered, for 1 minute; rotate the chops a half-turn without flipping, and grill, covered, for 1 minute more. Flip the chops and grill, covered, 1 minute; rotate and grill, covered, 1 minute more. Transfer the chops to a plate, cover with foil and let rest for 5 minutes before serving with the apple slices as garnish.

We stay away from pork chops because they are always dry but this recipe was perfect!!! We will put this in our dinner rotation again.
