Ingredients
Brussels Sprouts:
1 pound Brussels sprouts, trimmed and halved
1/2 red onion, sliced
2 tablespoons olive oil
1/2 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
Dressing:
2 teaspoons Dijon mustard
1 teaspoon rice wine vinegar
1 teaspoon honey
1 tablespoon olive oil
Kosher salt and freshly ground black pepper
Directions
Special equipment:
a grill; a nonstick grill basket- For the Brussels sprouts: Preheat the grill to medium-high heat (425 degrees F).
- Toss the Brussels sprouts and onion with the olive oil, salt and pepper in a nonstick grill basket. Place the basket on the grill rack. Cover and cook until the Brussels sprouts begin to soften, 8 to 10 minutes. Uncover and stir the vegetables. Cover and cook until the vegetables are charred and crisp-tender, about 2 more minutes.
- Remove the vegetables from the basket to a serving bowl.
- For the dressing: Whisk together the mustard, vinegar, honey and olive oil in a small bowl. Season with salt and pepper. Pour the desired amount of dressing over the Brussels sprouts and toss to coat. Serve warm.
