Ingredients
Two 12-ounce cans cola
1 cup low-sodium soy sauce
2 tablespoons light brown sugar
2 tablespoons red wine vinegar
2 tablespoons Worcestershire sauce
2 cloves garlic, minced
1 1/2 pounds country-style pork ribs
1 tablespoon cornstarch
Oil, for the grill pan
Kosher salt and freshly ground black pepper
Directions
Special equipment:
a grill pan- Combine the cola, soy sauce, brown sugar, vinegar, Worcestershire sauce and garlic in a bowl. Set aside and reserve 1 cup of the marinade. Add the ribs to a shallow dish or large zip-top plastic bag. Pour the remaining marinade over the ribs, turning to coat. Cover or seal and refrigerate for at least 4 hours and up to overnight.
- Remove the ribs from the marinade. Pour the reserved cup marinade into a small saucepan. Whisk in the cornstarch. Bring to a boil and simmer until thickened, about 2 minutes.
- Heat an oiled grill pan over medium-high heat. Sprinkle the ribs with salt and pepper. Grill the ribs, turning occasionally, until a thermometer inserted in the thickest portion registers 145 degrees F, 12 to 15 minutes.
- Remove from the grill pan and brush with the thickened marinade before serving.
