Grilled Soy Maple Mushrooms

Ingredients
2 tablespoons toasted sesame oil
2 tablespoons soy sauce
2 tablespoons maple syrup
2 tablespoons rice wine vinegar or white wine vinegar
1 tablespoon Dijon mustard
2 cloves garlic, finely minced
Freshly ground black pepper
About 14 ounces (400 grams) oyster mushrooms
Neutral oil, for grilling
Mayonnaise, preferably Japanese mayo
2 tablespoons finely chopped chives or green onion
1 tablespoon toasted sesame seeds
Directions
- In a large bowl, whisk together the sesame oil, soy sauce, maple syrup, vinegar, Dijon and garlic. Season with pepper, toss in the mushrooms to coat and set aside for 30 minutes or up to 2 hours to marinate.
- Heat your grill to high. Lightly oil the grates of the grill and transfer on the marinated mushrooms. Cook the mushrooms until well charred, about 2 minutes per side, pressing down lightly on the mushrooms with a spatula to achieve a better char.
- Drizzle or swipe a little mayonnaise onto a serving dish and top with the mushrooms. Scatter with the chives or green onion and toasted sesame seeds.
