Guiltless Warm Flourless Chocolate Cake

Ingredients

Cooking spray

6 ounces 70 percent dark chocolate

1 tablespoon orange zest

1 teaspoon vanilla extract

2 very ripe bananas

1/4 cup roasted sweet potato

1/4 cup honey

1 whole egg

3 egg whites

Directions

  1. Preheat oven to 350 degrees F.
  2. Place 8 (4-ounce) ramekins or custard cups on a large baking sheet. Spray with cooking spray and set aside.
  3. Combine chocolate, orange zest and vanilla extract in a medium bowl over hot boiling water. Whisk until chocolate is completely melted.
  4. Puree bananas, sweet potato and honey until smooth.
  5. Remove the melted chocolate from heat and fold over banana puree and 1 whole egg. Mix well.
  6. Whip the egg whites until soft peak.
  7. Slowly fold egg whites into chocolate mixture.
  8. Spoon mix into ramekins, filling them almost to the top.
  9. Bake for approximately 6 to 7 minutes, remove and serve. Warm center of the chocolate should be soft.

The bake time was closer to 20-25 minutes for larger ramekins, mine was enough for 6. When warm, the banana flavor was pretty strong and the texture was like a wet/moist bread pudding. Taste was ok, but overall it didn't work for me. Once refrigerated, the texture became more like a light, moist, fudge. I think the amount of banana & sweet potato made it too dense, maybe try this again with less puree if I'm really bored. I'd stick with the basic, flourless, chocolate cake instead.
