Hamburger Sliders

Ingredients

1 pound ground beef (80 percent lean)

1 teaspoon kosher salt

1/4 teaspoon freshly ground black pepper

16 small slices Colby Jack cheese (about 2 inches square)

8 pretzel slider buns, split

For serving: tomato slices, lettuce leaves, red onion slices and dill pickle rounds

Directions

  1. Prepare a grill or griddle for medium-high heat.
  2. Add the beef, salt and pepper to a medium bowl and mix to combine. Divide the beef into 8 equal portions, then form each portion into a patty a little larger in diameter than the buns.
  3. Cook the patties for 3 minutes or so (if using a griddle, do this in batches to avoid crowding). Flip with a spatula, add 2 slices of cheese to each and cook until the cheese melts and the burgers are cooked to medium, 3 to 5 minutes more.
  4. Transfer the burgers to the buns and serve immediately with tomato slices, lettuce, red onions and pickles.
