Hot Chocolate Dessert

Ingredients

11/2 cups water

1/4 cup sugar

8 ounces good quality bittersweet chocolate, chopped

1/4 cup unsweetened (Dutch process) cocoa powder

3 cups half 'n half

11/2 teaspoons vanilla

2 to 3 tablespoons Cognac or dark rum, or to taste, if desired

Whipped Cream and Chocolate Shavings, for garnish

Directions

  1. In a saucepan combine the water and sugar, bring to a simmer, stirring, over moderate heat and simmer until sugar is dissolved. Remove from the heat, add the chocolate and stir until smooth.
  2. In another saucepan sift the cocoa powder. Whisk in the half 'n half in a stream. Place over moderate heat and bring to a simmer, whisking. Add the melted chocolate to the pan, whisking, until hot. Do not boil. Off the heat whisk in the vanilla and Cognac, if desired.
  3. Pour into cups and garnish with the whipped cream and chocolate shavings. Serve immediately.
