Hot Chocolate "Volcano"

Ingredients

1/2 tablespoon organic, dark Dutch process cocoa powder

1/2 tablespoon white sugar

1/2 tablespoon cornstarch

1/2 tablespoon instant powdered milk

Pinch ground cinnamon

Pinch salt

Pinch vanilla powder

4 ounces whole milk

3 ounces whipping cream

Chocolate shavings, for garnish

Chopped pistachios, for garnish

Directions

  1. Whisk the cocoa powder, sugar, cornstarch, powdered milk, cinnamon, salt and vanilla powder together with the milk in a saucepan. Bring to a boil while continuing to stir the mixture so as to not to burn the chocolate.
  2. Add the whipping cream to the bottom of your serving mug and tap the bottom to settle. Pour the hot chocolate mixture over the whipping cream in the serving mug. Keep watching the reaction of your Volcano Eruption.
  3. Add chocolate shavings and pistachios on the top of your volcano.

OH MY GOSH! I have NEVER had a hot chocolate as gourmet and soooo good as this one! I served it as a dessert and it was a hit for my small gathering. I had quadrupled the recipe for mugs, and it didnt' quite fill the mugs, so need to multiply it some more. I used Trader Joes box whipping cream (not refrigerated) with no added sugar. It was perfect. Decadent is definitely the word.
