1 cup granulated sugar, plus more if needed

1 to 2 jalapenos, seeds and ribs removed, diced
Grated zest and juice of 1 large orange (about 1/2 cup juice)
1 12-ounce bag fresh cranberries
Grated zest of 1 lemon, plus 1 tablespoon fresh lemon juice
Kosher salt

- Combine the sugar, ginger, jalapenos, orange zest and orange juice. In a medium saucepan over medium heat. Bring to a simmer and cook 2 minutes. Add the cranberries and cook until they pop, 10 to 20 minutes, stirring frequently and adding water if the mixture appears too dry.
