Bananas Foster Chicken and Waffles

Ingredients

Waffles:

2 cups all-purpose flour

1 tablespoon sugar 

4 teaspoons baking powder 

1/2 teaspoon salt 

2 eggs 

1 3/4 cups milk 

1 teaspoon vanilla 

2 teaspoons rum 

1/2 cup vegetable oil or canola oil, plus for frying

Fried Chicken:

1 cup cornmeal

3 cups all-purpose flour 

1 tablespoon baking powder 

1 tablespoon salt, plus for sprinkling

2 teaspoons garlic powder 

2 teaspoons onion powder

1 teaspoon black pepper, plus for sprinkling

1 teaspoon dried thyme 

1/2 teaspoon cayenne 

2 cups buttermilk

2 pounds chicken thighs

Bananas Foster Sauce:

1 stick (8 tablespoons) butter

1/2 cup brown sugar 

1/4 cup dark rum 

2 bananas, sliced 

1/2 cup pecans, crushed 

Directions

  1. For the waffles: Fill a deep, heavy pot with 3 inches of oil; heat to 350 degrees F.
  2. Mix the dry ingredients and the wet ingredients separately, then mix them together. Cook in a waffle maker, then deep-fry for about 45 seconds.
  3. For the fried chicken: Mix all the dry ingredients in a large bowl. Pour the buttermilk into a second bowl. Pat the chicken dry and sprinkle generously with salt and pepper. Dip the chicken in the flour mixture, then in the buttermilk, and again in the flour. Deep-fry until the outside is crispy and the center is white.
  4. For the bananas foster sauce: Melt the butter in a medium skillet over medium heat. Add the brown sugar; stir until dissolved. Add the rum and flambe. Add the bananas and cook for 2 minutes. Pour over the chicken and waffles, and enjoy!
