Lime Vinaigrette

Ingredients

1/4 cup lime juice

1/4 cup fresh orange juice

1 1/2 teaspoons honey

1/4 cup orange zest

1/8 cup sugar

Salt

Pinch white pepper

1 cup plus 2 tablespoons light extra-virgin olive oil

1 pound mixed greens

Directions

  1. Place lime juice, orange juice, honey, orange zest, and sugar in a large bowl. With a whisk in 1 hand and the oil in another, slowly begin to add the oil until it's all gone. Season with salt and white pepper, to taste. The finished product should look like it has significant body, taste semi-sweet and with a touch of tartness. Toss desired amount with mixed greens, and serve.

This dressing was tasty, but not as tangy as I had thought it might be. I ended up adding about 1 Tblsp of Rice Wine Vinegar to the finished product to give it a tang that I needed. That worked perfectly for me. On the next go round, I will not add 1/4c. of orange zest - that was an inordinate amount of zest! - and perhaps back down the orange juice as well. I might change up the vinegar to red wine vinegar next time or more lime juice.
