Louise's Broccoli Casserole

Ingredients

2 pounds broccoli, fresh or frozen, cut into florets

1 can cream of mushroom soup

1 (14-ounce) package herb seasoned stuffing mix

1/2 cup butter, melted

8 ounces Cheddar, shredded

Directions

  1. Preheat the oven to 350 degrees F.
  2. Steam the broccoli in a pan with 1/2-inch water, over medium heat, until crisp tender. Drain and add to a large bowl. Add the cream of mushroom soup, stuffing mix, and butter and stir to combine. Spread evenly into a 9 by 13-inch ovenproof baking dish. Bake for 30 minutes topping with cheese before last 10 minutes of cooking. Remove from the oven and serve.

This recipe has the exact same ingredients as a casserole I made a while ago.  (I lost that recipe.) I mixed the cooked broccoli, any cream 'of' soup you wish, and shredded cheese.  Mix and add to baking dish.  Brown some bread crumbs/cubes/stuffing in the melted butter.  Top the broccoli with crumbs and bake as directed. Season as desired; it is a flexible recipe.  I think it would also be delicious as written.
