Maple Walnut Baked Apples

Ingredients

4 large cooking apples, such as Mutsu, Greening, or Rome Beauty

1/2 cup chopped toasted walnuts

2 tablespoons packed brown sugar

1 teaspoon ground cinnamon

1/4 teaspoon ground nutmeg

1/4 cup pure maple syrup

1/2 cup unsweetened apple juice

Directions

  1. Preheat the oven to 375 degrees.
  2. Wash and core the apples, leaving the bottoms intact. In a bowl, combine the walnuts, brown sugar, cinnamon, nutmeg, and 2 tablespoons of the maple syrup. Stuff the hollowedout center of each apple with the nut mixture.
  3. Place the apples upright and close together in the pan. Combine the apple juice with the remaining 2 tablespoons of maple syrup and pour around the apples. Cover the baking pan with aluminum foil and bake for about 45 minutes, until the apples are tender.
  4. Serve hot or cold with vanilla frozen yogurt or whipped cream

I only had mackintosh apples after the holidays and needed to use them up . <br />I can't help but use my own twists to recipes as it's just the feeling you get sometimes while preparing .... Lol ! But I toasted my walnuts in 4 Tbl . Butter , as butter always adds richness right ? I would just be paying attention though while toasting in the butter ; you want just med-low heat , stirring to move around throughout the toasting time ..... Roughly five min. <br />Then ..... I added everything they called for in my bowl , with the addition of 1/2 cup raisins and two teaspoons vanilla extract ..... OOOOH my GOD , the AROAMA !! And okay , I did taste it and yes , it's to die for !! <br />Then , after filling my apples ,I didn't have apple juice so I took two single serving cups ( those pre-packed-snack-applesauces you throw into your lunch bag .....) And added the maple syrup to it and then spooned all over tops of apples . It's I the oven baking now , so I'll up date later after we try them tonight ...... Stay tuned ❄️❄️
