Mashed Sweet Potatoes

Ingredients

1 sweet potato, peeled and cut into 1-inch pieces

1 brown plantain

1 teaspoon brown sugar

1 teaspoon cinnamon

1 teaspoon butter

Nutmeg

Salt

Directions

  1. Place the sweet potato in a medium-size pot. Cover with water and bring to a boil. Boil for 10 minutes. Peel the plantain and cut into pieces. Add to the boiling water and cook for 5 minutes. Remove from the heat and drain. Return the potato and plantain to the pot and mash well with a potato masher. Incorporate brown sugar, cinnamon, and butter. Add nutmeg and salt, to taste. Blend well.

First of all, if you make this with the plantains, make sure you do what the recipe says and use brown ones (which I take to mean overripe). I used unripe ones (like the idiot I am) and boiled them a little longer, thinking that would be ok...it wasn't. There were chunks of plantains in the potatoes as a result, and it was gross. <br /> <br />Having said that, I'm not sure even ripe plantains would save this recipe. It calls for way too little butter...one teaspoon per potato? I think they meant tablespoon, but it still wasn't enough. There also wasn't enough sugar. I ended up with a bland, mushy mess.
