Feta Cheese Waffles

Ingredients

Cooking spray

One 8-ounce block Greek feta

2 cups quartered yellow and red cherry tomatoes

1/2 cup olive oil

1/4 cup pitted kalamata olives

2 tablespoons finely chopped parsley

1 tablespoon finely chopped oregano

2 cloves garlic, minced or grated

Zest of 1 lemon

Kosher salt and freshly ground black pepper

Directions

  1. Preheat a shallow waffle iron to its highest setting. Spray the iron on the top and bottom with cooking spray. Place the block of feta in the center of the waffle iron, then press until the feta melts and the waffle iron closes. Allow to cook until golden brown and crisp, 3 to 5 minutes. Mix together the tomatoes, olive oil, olives, parsley, oregano, garlic and lemon zest and pour into a food processor. Briefly pulse until the mixture looks coarse. Taste and season to your liking. Remember, feta is salty; do not over season with salt. Remove the feta waffle from the waffle iron and cut into 8 wedges. Place on a platter and serve with the tomato mixture.

Recipe sounded great, but it did not work. I followed the recipe as written. I used a solid block of feta, but it turned to a wet mush which I could not get it off my waffle iron despite spraying it very well with cooking spray. The waffle iron was old and I threw it out. The sauce tasted good on the feta, but tasted a bit odd on its own.
