Ingredients
Pupcakes:
Nonstick cooking spray, for the muffin tin
1 cup all-purpose flour
1 teaspoon baking soda
1/2 teaspoon baking powder
1/2 cup unsweetened applesauce
1/2 cup pumpkin puree
1/4 cup natural creamy peanut butter
3 tablespoons vegetable oil
1 large egg
Frosting:
Half an 8-ounce block cream cheese, at room temperature
1/4 cup natural creamy peanut butter
Tiny bone-shaped dog treats, such as Milk-bones Mini’s, for garnish, optional
Directions
Special equipment:
Muffin pan- For the pupcakes: Preheat the oven to 350 degrees F. Lightly grease 6 wells in a muffin tin.
- Whisk together the flour, baking soda and baking powder in a small bowl. Whisk together the applesauce, pumpkin, peanut butter and oil in a separate bowl. Beat in the egg. Add the flour mixture, stirring until combined.
- Divide the batter evenly among the muffin cups. Bake, rotating the tin after 9 minutes, until a toothpick inserted in a center comes out clean, about 18 minutes total. Remove the pupcakes to a wire rack to cool completely.
- For the frosting: Beat the cream cheese and peanut butter together in a bowl until smooth. Frost the pupcakes with the frosting. Garnish with the dog treats, if using. Store any leftovers in an airtight container in the refrigerator.
