Ingredients

3 plum tomatoes, chopped

1/2 red onion, chopped

1 jalapeno, seeded and chopped

3 tablespoons cilantro, chopped

Juice of one lime

1 tablespoon olive oil

Salt and pepper

Directions

  1. In a medium bowl combine tomatoes, onion, jalapeno and cilantro. Stir in lime juice and olive oil. Season with salt and pepper.

This is okay...if you want heat definately add the jalepeno seeds because the pepper itself isn't enough. Also I found that it was missing something so added a little celery, but still couldn't get it just right so it definately needs to be played around with.
