Pineapple Baked Beans and Beef with Fried Pineapple Rings

Ingredients

Baked Beans:

1 pound ground beef

1 (28-ounce) can baked beans

8 ounces pineapple bits

1 onion, chopped

1 green pepper, chopped

1/2 cup barbecue sauce

2 tablespoons soy sauce

1 garlic clove, minced

1/2 teaspoon salt

1/4 teaspoon pepper

Fried Pineapple rings:

1 egg

1/4 cup all-purpose flour

1 (8-ounce) can pineapple rings, drained

1 cup vegetable oil

Directions

  1. In a large skillet, brown the beef. Drain excess fat and transfer to a 5-quart slow cooker. Add the remaining ingredients, mix well, cover, and cook on low for 4 to 8 hours until bubbly.
  2. To make pineapple rings, beat egg well. Mix in the flour and make a thick paste. Dip pineapple slices in the batter and fry in medium hot oil.
  3. To serve, place baked beans in bowl and top with pineapple rings.

OMG were these baked beans good!!! But, I used a little less ground meat (I had 1.5 lbs for a double recipe) and they were a bit on the liquid side which I drained off abt a cup and a half. But no matter, the taste was excellent. <br /> <br />As for the fried pineapple rings, I rate that as "don't bother." There needs to be more flavor to the batter. Just egg and flour is bland; sprinkling a little salt helped some but not really the answer to save the result.
