Pork Loin with Coca-Cola BBQ Sauce

Ingredients

Barbecue Pork Loin:

2 1-pound trimmed pork loin

1 tbsp garlic salt

1 pinch black pepper

1 tbsp Cajun spice

Olive oil

1 tbsp fine brown sugar

Coca-Cola Barbeque Sauce:

2 tbsp canola oil

3 tbsp diced jalapeno

2 tbsp diced garlic

3 cups ketchup

1/4 cup chicken stock

1 cup orange juice

1/2 cup molasses

1/4 cup Coca-Cola

1/2 cup brown sugar

1 tbsp liquid smoke

1 tsp garlic salt

Directions

  1. For the pork loin: Start by seasoning the pork really well all over with the garlic salt, Cajun spice, and the brown sugar. Then using your hand, pat the pork with the oil. On the grill or grill pan and medium heat cook for 8 to 12 minutes, rotating every couple of minutes. After the pork is five minutes from done, add the barbeque sauce and rotate so that the sauce sticks.
  2. Remove and slice. Serve with Sauce.
  3. For the sauce: In large sauce pan add the oil, heat the oil just a little and add the garlic, shallots, jalapeno; saute for 2 minutes, then add the remaining ingredients. Mix well and bring to a low simmer until sauce is combined. Check the flavor and adjust the sweetness if you like.

Good Stuff! I did the recipe to the letter the first time and it was great. The sauce is the Boss. Nice heat and nice sweet! Second time, added more peppers and used orange soda for both the coca cola and chicken broth. Really nice. Yes, I used Orange Soda made by Coca Cola! Third time I used pineapple juice instead of orange juice because I ran out of OJ. Used orange soda again, more peppers. Awesome too. Now I use this sauce recipe for all my BBQ needs. Thanks G.
