Ingredients

3 baked potatoes

3 green scallions, chopped

2 tablespoons sour cream

2 tablespoons mayonnaise

1 tablespoon Dijon mustard

Salt

Pepper

1 teaspoon white vinegar

Directions

  1. Peel potatoes and cut into 1-inch chunks. Mix with scallions in a serving bowl. In a separate bowl combine sour cream, mayonnaise, mustard, salt, pepper and vinegar. Pour dressing over potatoes and toss to coat.
