Ingredients
Kosher salt
2 tablespoons salted butter
2 tablespoons olive oil
6 ounces smoked sausage link, sliced into thin rounds
3 garlic cloves, minced
1 small green bell pepper, diced
1 small red bell pepper, diced
1/2 yellow onion, diced
1 tablespoon Cajun seasoning
2/3 cups chicken stock
1/2 cup heavy cream
1 1/2 cups pulled rotisserie chicken, dark and white meat
One 16-ounce package potato gnocchi
1/2 cup fresh grated Parmesan
1/4 cup chopped parsley
Directions
- Bring a large pot of salted water to a boil.
- Heat the butter and olive oil in a large skillet over medium-high heat. Brown the sausage rounds on both sides, 3 to 4 minutes. Remove to a plate with a slotted spoon.
- Add the garlic, green bell pepper, red bell pepper and onion to the same skillet and cook until softened, 2 to 3 minutes. Season with the Cajun seasoning and stir. Add the stock, scraping the bottom of the pan, followed by the cream, then the chicken. Bring to a simmer and allow to thicken, about 5 minutes.
- Meanwhile, drop the gnocchi into the boiling water, cooking them until they float to the top, 2 to 3 minutes. Drain and add the gnocchi to the sauce. Add the sausage, tossing to fully coat. Serve in bowls, garnished with the grated Parmesan and parsley.
