Chicken, Sausage & Gnocchi

When Ree is in a time crunch and needs to get dinner on the table fast, one of her go to shortcuts is store bought rotisserie chicken, which provides about 3 cups of meat. This dish can be made in under 30 minutes and is great for a midweek family meal.

Ingredients

Kosher salt

2 tablespoons salted butter

2 tablespoons olive oil

6 ounces smoked sausage link, sliced into thin rounds

3 garlic cloves, minced

1 small green bell pepper, diced

1 small red bell pepper, diced

1/2 yellow onion, diced

1 tablespoon Cajun seasoning

2/3 cups chicken stock

1/2 cup heavy cream

1 1/2 cups pulled rotisserie chicken, dark and white meat

One 16-ounce package potato gnocchi

1/2 cup fresh grated Parmesan

1/4 cup chopped parsley

Directions

  1. Bring a large pot of salted water to a boil.
  2. Heat the butter and olive oil in a large skillet over medium-high heat. Brown the sausage rounds on both sides, 3 to 4 minutes. Remove to a plate with a slotted spoon.
  3. Add the garlic, green bell pepper, red bell pepper and onion to the same skillet and cook until softened, 2 to 3 minutes. Season with the Cajun seasoning and stir. Add the stock, scraping the bottom of the pan, followed by the cream, then the chicken. Bring to a simmer and allow to thicken, about 5 minutes.
  4. Meanwhile, drop the gnocchi into the boiling water, cooking them until they float to the top, 2 to 3 minutes. Drain and add the gnocchi to the sauce. Add the sausage, tossing to fully coat. Serve in bowls, garnished with the grated Parmesan and parsley.

Excellent dish! Made this for dinner tonight. I had never had gnocchi before. Now I love it! Made exactly as directed. Next time I will add more sausage.
