Ingredients

3 sticks (1 1/2 cups) butter

2 cups brown sugar

1 1/2 cups granulated sugar

2 teaspoons vanilla extract

4 whole eggs

4 heaping cups all-purpose flour

4 teaspoons baking soda

1 teaspoon salt

3 cups prepared granola

1 heaping cup quick oats

1 1/2 cups apricots

1 cup dried cherries

1 cup chopped pecans

1/2 cup golden raisins

Directions

  1. Preheat the oven to 375 degrees F.
  2. Cream the butter and sugars. Add the vanilla and eggs. Next, add the flour, baking soda and salt. Add in the granola and oatmeal. Fold in the apricots, cherries, pecans and raisins.
  3. With a cookie scoop or two spoons, drop onto cookie sheets and bake for 12 to 14 minutes. Cool on a rack. Eat, and feel unguilty because there's no chocolate in this cookie.

I make these with 4 sticks of butter, 4 cups of granola. Rolled instead of quick oats and white chocolate chips, craisins and pecans. This makes the yummiest combination. My daughter asked me to try them with dark chocolate chips, and they weren't near as good. It's the white chocolate that makes the cookie. We're not really big dried cherry/apricot fans so this worked for us!
