Rich Cauliflower Mash

Ingredients

4 tablespoons salted butter

1 large head cauliflower, broken into florets and the core sliced 

1 large onion, diced 

4 garlic cloves, minced 

1 tablespoon minced fresh rosemary 

2/3 cup heavy cream 

Kosher salt, to taste 

Black pepper, to taste 

Flat-leaf parsley, chopped, for garnish 

Directions

Special equipment:
a blender or immersion blender
  1. Melt the butter in a large pot over medium heat. Add the cauliflower florets, core slices, onion, garlic and rosemary. Cook, stirring, for 1 minute. Add the cream and a good pinch of salt and pepper. Bring to a simmer, reduce the heat to medium-low. Cover and let cook until the cauliflower has softened, about 5 minutes.
  2. Use a blender or immersion blender to puree until smooth. Taste and adjust seasoning as needed. Garnish with parsley and serve.

Followed recipe as written. I was cooking dinner for neighbors adhering to their dietary restrictions. They loved it! I tried a spoonful and I was surprised that I found it good. That's high praise coming from someone who hates onions and isn't terribly fond of cauliflower. Rosemary is the magic enhancement. Absolutely 5 stars!
