Slow-Cooker Irish Oats

Ingredients

4 cups frozen peach slices

2 cups steel-cut oats 

2/3 cup packed brown sugar

1 tablespoon vanilla extract

1 teaspoon kosher salt 

1 cup sliced almonds 

1 cup flaked coconut 

2 cups golden raisins

1 cup whole milk 

1/4 cup heavy cream 

1 cup fresh blueberries 

Honey, for drizzling 

Directions

  1. Place the frozen peaches, oats, brown sugar, vanilla, salt and 8 cups water in the bowl of a slow cooker. Stir, set to low and cook for 6 to 8 hours or up to overnight.
  2. Meanwhile, toast the sliced almonds and flaked coconut separately in dry nonstick skillets over medium heat, shaking the pans frequently to ensure an even toast, until golden and fragrant, 3 to 4 minutes. Let cool. Store, covered, until serving.
  3. To serve, stir the raisins, milk and cream into the oat mixture. Spoon into bowls and garnish with the almonds, coconut, blueberries and a drizzle of honey.

I'm thinking that reviewers who are saying there is too much water just have a different wattage slow cooker. It is a lot of water, and I let mine cook from about 9pm to 6am and it was still pretty watery so I just turned my slow cooker to HIGH for the next hour or so and it leveled out. <br />It's tasty. It's not hard. I followed the directions to a tee - including the honey drizzle (and I don't do much sugar) and would give it about 7.5/10, but I also don't LOVE oatmeal like many do, (I just enjoy it occasionally). <br />Not sure the raisins are additive. But the peaches are a fun addition and the reviewers' suggestion to use a slow cooker liner (who knew there was such a thing?) was spot on a good call. Worth trying if you LOVE oatmeal!
