Reuben Chips

Ingredients

1/4 cup mayonnaise

1/4 cup ketchup 

2 tablespoons spicy brown mustard 

1 tablespoon white vinegar 

10 cups potato chips

1 1/2 cups shredded Swiss cheese 

1 cup prepared sauerkraut 

1 cup chopped thickly-sliced corned beef (about 7 slices) 

2 cups shredded romaine lettuce 

Directions

  1. Preheat the broiler element in your oven.
  2. Combine the mayonnaise, ketchup, mustard and vinegar in a bowl. Set aside.
  3. Place one-third of the potato chips in a baking dish. Layer with one-third of the cheese, sauerkraut and corned beef. Add half of the remaining chips in another layer on top, then evenly layer half of the remaining cheese, sauerkraut and corned beef. Finish with the remaining chips followed by the rest of the cheese, sauerkraut and corned beef. Broil just until the cheese melts.
  4. Toss the lettuce with the mayonnaise mixture and top the chips. Serve immediately.

Make sure you use kettle cooked chips!!! Tried regular and kettle and the regular get a little soggy but still delicious! Definetly will make again!
