Roast Pork

  • Level: Easy
  • Yield: 5 to 6 servings

Ingredients

One 4-pound pork roast, loin or center cut

2 cloves garlic, minced

Salt and pepper to taste

4 bay leaves

1/2 cup white vinegar

1/2 teaspoon dried thyme

Directions

  1. Preheat oven to 325 degrees. Pierce the roast in several places with a two-pronged fork. Force some minced garlic into each hole, again with the aid of the fork. Sprinkle liberally with salt and pepper. Place the bay leaves in the bottom of the roasting pan. Place the roast on top, fat side up. Combine vinegar and thyme, and pour evenly over the roast. Place in oven, allowing 35 minutes baking time per pound. Baste occasionally.

This was easy, but definitely not my favorite roast pork recipe. I did follow the advice of some of the other reviewers, but I am not sure I should have! First of all, the vinegar taste was rather strong to me. And since that was pretty much the point of the recipe, it missed the mark. I did add vegetables to the pan, and they did well, but I am not sure the addition of chicken broth as some suggested, was necessary. Overall, the pork was tender and juicy, but nothing special. I would not make it again. Oh, and the garlic did add some flavor, but it was not overpowering .
