Turkey -Pork Sliders

Ingredients

1 pound ground turkey breast

1 pound ground pork

3 slices bread, crumbled

2 tablespoons dried chopped onions

2 eggs

1 1/2 tablespoons sugar

3 tablespoons soy sauce

1 glove garlic, minced

1 teaspoon ground ginger

Mini egg dough buns or mini potato rolls, for serving

Directions

  1. Mix all the above ingredients in a food processor until blended. Heat a large skillet or griddle to medium heat. You will find the meat mixture sticky and gooey so I used 2 spoons to work a ball of meat onto the skillet, then flattened with a greased spatula. Form meat mixture into16 small balls, about 2 1/2-inches across, and grill on both sides for about 3 to 5 minutes or until cooked through. Serve on mini egg dough buns or mini potato rolls. Serve with favorite condiments.

Ok, I went a bit afield from the recipe, but liked the result! I lightened further by eliminating the eggs and the bread. I substituted 1/2 cup of panko bread crumbs, and added a packet of unflavored gelatin (previously soaked in 1/4 cup of water) to help bind the meat together. I also downsized to 1/2 teaspoon ginger, eliminated the dried onion in favor of a tablespoon of a commercially available dried minced onion and garlic spice blend. As a condiment, I blended a ketchup, hoisin, sriracha sauce (approx. 2 parts ketchup, 1 part hoisin, dash of sriracha to taste). Would make it again.
