Salmon Burgers

Ingredients

2 pounds salmon fillets, skins removed

2 egg whites

1 tablespoon Dijon mustard

2 tablespoons minced fresh dill

1/2 cup dried breadcrumbs (as needed)

Kosher salt and freshly ground black pepper

2 tablespoons good olive oil

4 hamburger buns

Simplest Coleslaw, recipe follows

Simplest Coleslaw:

2 cups green cabbage, grated on a box grater

1/3 cup mayonnaise

Dash of cold water

Kosher salt and freshly ground black pepper

Directions

  1. Mince the salmon on a cutting board then place it into a resealable bag. Using the flat end of a meat tenderizer, mash the salmon until it is finely minced. Place the salmon, egg whites, mustard, dill, breadcrumbs, and salt and pepper to taste into a large bowl and mix until well combined. Form into four patties.
  2. Heat the olive oil in a large (12-inch) grill pan over medium-high heat. When the grill pan is hot, add the salmon patties and cook for five minutes on each side, without moving so they form a crust. Toast the buns on the grill pan, cut sides down.
  3. To serve, place the cooked salmon burgers on the toasted buns with the Simplest Coleslaw on top of the burger.

Simplest Coleslaw:

  1. Place the cabbage, mayonnaise, water, 1/2 teaspoon salt, and 1/4 teaspoon pepper in a large bowl and mix well.

OMG YUM!!<br />BEST FISH SANDWICH I HAVE EVER TASTED!!!<br /><br />I made some changes though:<br />- i added garlic powder to the burger mix<br />- i used avocado oil instead of olive oil <br />- I grilled the patties instead of pan frying them<br />- i sprinkled a good amount of Old Bay on the patties after grilling them<br />- i topped the burgers with a nice hefty slice of onion (along with the cole slaw)<br />Also, i didnt have fresh dill so i used powdered and i doubt i could have tasted the difference from fresh. <br /><br />As for the fish, instead of buying expensive fillets, i bought cheap salmon collars (i even got mine on managers special so the whole meal cost me $14 with buns and cabbage, and can feed 4+ people). I used a knife to scrape the meat off the skin, and then as a bonus, dropped the skins in the deep fryer for a delicious crispy appetizer. <br /><br />Keep in mind this recipe makes 4 very big/thick patties, so buy XL hamburger buns.
