Dried Fruit Compote

Ingredients

1 1/2 cups port wine

1/4 cup sugar

1 cup mixed dried fruit

1/2 cup dried cranberries

Low-fat vanilla frozen yogurt, desired amount

Toasted slivered almonds, for garnish

Directions

  1. In a small saucepan, simmer together port wine and sugar over medium-high heat until the sugar has dissolved. Add dried fruit and dried cranberries. Bring mixture to a boil and reduce to a simmer for 5 minutes. Set aside to cool.
  2. Serve over frozen yogurt and garnish with toasted slivered almonds.

I made this but I changed it a little. I put the dried fruit in the pan on the stove, drank the port while eating the almonds, and left the ice cream on the counter to soften. When I had finished with the port, the fruit was burned and the ice cream was liquid, but it didn't really matter. Outstanding!
