Ingredients

1/2 cup finely chopped nuts

1 package premium white morsels, melted

1 cup melted caramel

1 small prepared cheesecake

5 lollipop sticks

Directions

  1. Place nuts in a shallow bowl or dish. Melt chocolate in a bowl in the microwave on 50% power, and then whisk until smooth. Melt caramel in a separate bowl in the microwave on 50 percent power, and whisk until smooth.
  2. With a mellon baller, scoop cheesecake into a balls. Insert lollipop sticks into cheesecake ball. Dip ball in either white chocolate or in caramel, and then roll in nuts to fully coat.

I do this every year around the holidays. Quick tip: freeze your cheescake! Dipping and decorating go so much easier if you are dipping frozen cheesecake. You can also keep these in the freezer for a nice bite-sized snack. Just follow above directions leaving out the stick and store them in an airtight container or (my favorite a zip lock freezer bag. MMMMM Better than ice cream! :-
