Shoofly Pie

Ingredients

Crumb mixture:

1 cup flour

3/4 cup light brown sugar

1 teaspoon butter

Filling:

1 egg

1 cup molasses

1 cup boiling water

1 teaspoons baking soda

1 9-inch pie shell

Garnish: Whipped cream

Directions

  1. In a bowl combine flour and sugar. Cut in butter into the flour and sugar until mixture resembles crumbs. Remove 1/2 cup of the crumb mixture and set aside
  2. To larger part of crumb mixture add egg and molasses.
  3. Blend in 3/4 cup boiling water.
  4. Dissolve soda in remaining 1/4 cup water and add last.
  5. Pour into pie shell. Sprinkle with 1/4 cup reserved crumbs.
  6. Bake at 425 degrees for 15 minutes. Add remaining crumbs and bake 40-45 minutes.
  7. Garnish with whipped cream

As my pie crusts came in a set of two, I took two shots at getting this recipe right. Both times I had way more filling than the crusts could hold. Both times the crust on top burned. 1 teaspoon of butter for the crust mix hardly seemed like enough. And to top it all off, when the pies did cook, they tasted terrible. Never again with this one!
