Smoked Ham Salad Cups

Ham salad is a staple in the South. It's like chicken salad, but with ham, and it's a great way to use up leftover ham. Here, I serve my ham salad in endive cups for an elegant presentation.

Ingredients

1 cup mayonnaise

2 tablespoons pickle salad cubes, such as Mt. Olive

1 teaspoon Dijon mustard

1 teaspoon hot sauce

1 teaspoon dried tarragon

Pinch Miss Brown’s House Seasoning, recipe follows

8 ounces country ham, diced

3 stalks celery, diced

2 hard-cooked eggs, chopped

3 green onions, chopped (white parts for the ham salad; green parts for garnish)

2 to 3 endive, leaves separated

1/2 teaspoon smoked paprika

Miss Brown’s House Seasoning:

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon sweet paprika

1 teaspoon kosher salt

1 teaspoon freshly ground black pepper

Directions

  1. Stir together the mayonnaise, salad cubes, mustard, hot sauce, tarragon and House Seasoning in a large bowl. Add the ham, celery, eggs and white parts of the green onions and stir until combined.
  2. Scoop the ham salad into the endive cups and garnish with the green parts of the green onions. Sprinkle with the smoked paprika.

Miss Brown’s House Seasoning:

  1. Stir together the garlic and onion powders, paprika, salt and pepper in a small bowl. Store in an airtight container.

I love this recipe! I've been looking for a country ham salad close to my Mom's for years and this one is the closest. This is the only one I've found that included the boiled eggs. I love Kardea's southern recipes!
