Ingredients
1 cup mayonnaise
2 tablespoons pickle salad cubes, such as Mt. Olive
1 teaspoon Dijon mustard
1 teaspoon hot sauce
1 teaspoon dried tarragon
Pinch Miss Brown’s House Seasoning, recipe follows
8 ounces country ham, diced
3 stalks celery, diced
2 hard-cooked eggs, chopped
3 green onions, chopped (white parts for the ham salad; green parts for garnish)
2 to 3 endive, leaves separated
1/2 teaspoon smoked paprika
Miss Brown’s House Seasoning:
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon sweet paprika
1 teaspoon kosher salt
1 teaspoon freshly ground black pepper
Directions
- Stir together the mayonnaise, salad cubes, mustard, hot sauce, tarragon and House Seasoning in a large bowl. Add the ham, celery, eggs and white parts of the green onions and stir until combined.
- Scoop the ham salad into the endive cups and garnish with the green parts of the green onions. Sprinkle with the smoked paprika.
Miss Brown’s House Seasoning:
- Stir together the garlic and onion powders, paprika, salt and pepper in a small bowl. Store in an airtight container.
