Spinach and Feta Dip

This is Molly’s easy, cheesy, holiday appetizer…that also happens to be loaded with fresh spinach. The tangy feta really sets it apart—it will warm the bellies of all of your partygoers!

Ingredients

8 ounces cream cheese, at room temperature

1/4 cup Greek yogurt

1/4 cup sour cream

Juice of 1 lemon

1 clove garlic, grated

8 ounces feta cheese in brine, drained and crumbled

2 cups shredded mozzarella, divided

Pinch of crushed red pepper flakes

5 cups fresh baby spinach

Pita chips, for serving

Directions

  1. Preheat the oven to 425 degrees F.
  2. For the spinach and feta dip: In the bowl of a stand mixer fitted with the paddle attachment, add the cream cheese, Greek yogurt, sour cream, lemon juice and garlic. Beat on low speed until smooth. Add the feta cheese, 1 cup of the mozzarella and a good pinch of crushed red pepper flakes. Continue to beat until just combined. Add the spinach and beat until just combined. Transfer the cheese mixture to a 3 1/2-quart baking dish. Sprinkle the top with the remaining 1 cup mozzarella.
  3. Bake until the mixture is bubbling around the edges and the cheese on top is melted and golden, about 20 minutes. Let cool for 10 minutes on a wire rack before serving. Serve with pita chips for dipping.

The dip is good and very easy to make but needs some minor changes. The juice of 1 lemon is too much. It overpowered all the other flavors of the dip. I will make it again and use 1/2 of a lemon or less. I put a little amount of crushed red pepper flakes as I was afraid that it would be too spicy but will add more next time. It needs a little kick to it.
