Ingredients
8 ounces cream cheese, at room temperature
1/4 cup Greek yogurt
1/4 cup sour cream
Juice of 1 lemon
1 clove garlic, grated
8 ounces feta cheese in brine, drained and crumbled
2 cups shredded mozzarella, divided
Pinch of crushed red pepper flakes
5 cups fresh baby spinach
Pita chips, for serving
Directions
- Preheat the oven to 425 degrees F.
- For the spinach and feta dip: In the bowl of a stand mixer fitted with the paddle attachment, add the cream cheese, Greek yogurt, sour cream, lemon juice and garlic. Beat on low speed until smooth. Add the feta cheese, 1 cup of the mozzarella and a good pinch of crushed red pepper flakes. Continue to beat until just combined. Add the spinach and beat until just combined. Transfer the cheese mixture to a 3 1/2-quart baking dish. Sprinkle the top with the remaining 1 cup mozzarella.
- Bake until the mixture is bubbling around the edges and the cheese on top is melted and golden, about 20 minutes. Let cool for 10 minutes on a wire rack before serving. Serve with pita chips for dipping.
