Sweet Banana Rolls

Ingredients

2 tablespoons butter

1 tablespoon brown sugar

2 bananas, cut on the bias, 1/4-inch thick

1 cup sour cream

1 tablespoon confectioners' sugar

4 crepes, recipe follows

1/2 cup toasted slivered almonds

Sweet crepes

SWEET CREPES:

3/4 cup cold water

3/4 cup cold milk

3 large eggs

1 tablespoon sugar

Pinch salt

1 1/2 cups flour

5 tablespoons melted butter

Directions

  1. In a saute pan over medium heat, melt butter and add brown sugar. Add the banana pieces and allow to brown on both sides.
  2. In a small bowl combine the sour cream and the confectioners' sugar.
  3. To assemble, place crepe on plate and thinly spread with banana mixture. Thinly spread dollop of sour cream mixture and sprinkle with toasted almonds. Wrap crepe tightly to create rolled layers. Dust with confectioners' sugar and sprinkle with crushed toasted almonds.

SWEET CREPES:

  1. In a blender place water, milk and eggs and mix. Add sugar, salt, flour and butter. Mix until smooth. Let batter rest for 30 minutes.
  2. Heat a seasoned crepe pan over medium heat. Ladle 1-ounce batter into pan and angle pan so that batter spreads to edges of pan. Let cook about 45 seconds and turn over. Cook about 30 seconds more. Remove to cool. Stack between sheets of waxed paper.

I have to admit I tried this recipe and wanted it to work,but no matter what I did as an after thought,decided that there was no way I could fix this break fast. <br /><br />My family was nice enough to say that it tasted ok,good, but all honesty I strongly disliked it and the sour cream with sugar wasn't right.Sorry Food Network,one of the only recipes that I haven't liked from this site.Keep up the great work though,I love the shows and all of the delightful and creative recipes,thank you!
