Sweet Rice Flour and Cheese Bread

Ingredients

1 large cinnamon stick

1/2 cup butter

3/4 cup vegetable shortening

1 cup granulated sugar

4 large eggs

1 pound rice flour

1 1/2 teaspoons baking powder

2 cups finely grated aged cotija cheese

Directions

  1. Grind the cinnamon in a coffee grinder. Butter a 9 by 13-inch glass baking dish. In the bowl of an electric mixer, cream the butter and shortening. Add the sugar and whip until light and fluffy. Beat in 1 egg at a time. Sift the rice flour and baking powder into the mixture a little at a time. Stir in the cheese. Then add the batter to the buttered baking dish and cook for 20 to 25 minutes in 425 degree F oven until golden brown on the outside.

This recipe was rated by my 6 year old son Adam, since he cannot eat gluten or wheat,we tend to get excited over recipes this delicious! This has been one of his favorite breads!! I fully agree, great recipe; one critique, your recipe title say sweet rice flour, yet your ingredient list says just rice flour. Although both are rice flours, there is a difference between the two.Thanks from both of us!
