Bacon Waffles

Ingredients

Nonstick cooking spray

2 cups all-purpose flour 

3 teaspoons baking powder 

Kosher salt 

2 large eggs, separated 

1 1/2 cups milk 

3 tablespoons unsalted butter, melted

6 slices bacon, cut in half 

Maple syrup, for serving 

Directions

  1. Spray a waffle iron with nonstick cooking spray and preheat it.
  2. Sift together the flour, baking powder and 1/2 teaspoon salt in a medium bowl. Beat the egg whites in a second medium bowl until stiff.
  3. Beat the egg yolks with the milk and butter in a large bowl. Add the flour mixture, stirring until just blended. Fold in the beaten egg whites.
  4. Place 2 halves of a bacon slice in each waffle grid and close the cover. Cook for 1 minute and then add a scant 1/2 cup batter to each waffle grid. Bake until golden brown, about 5 minutes. Serve with maple syrup.

It made a nice consistency but it was bland as all get out and most (if not all) the flavor came from the bacon. It’s a good recipe for fluffy waffles but be sure to add about 2 tsp of vanilla accent and around 1/3 cup of granulated sugar to your batter.
