Ingredients

2 sticks (1 cup) margarine, softened

1 cup sour cream

2 cups self-rising flour

Cooking spray

Directions

  1. Preheat the oven to 400 degrees F. 
  2. In an electric mixer, cream the margarine and sour cream. Add the flour and mix well. Drop large spoonfuls of the dough into a muffin pan that has been sprayed with cooking spray or lined with muffin cups. Bake for until the tops of the muffins are golden brown, 15 to 20 minutes.

Cook’s Note

For smaller muffins, use mini muffin pans and reduce the baking time to 10 to 12 minutes.

I have made this for years and they are my daughter’s favorite! I’ve made mini ones and regular ones but our favorite - add some fresh grated cheddar to the batter and bake. When done, while still hot, brush them with melted butter that has been infused with a couple cloves of garlic. Yum -Instant garlic cheddar biscuits!
