Ingredients

3 tablespoons olive oil

1 medium onion, finely diced 

1 medium bell pepper, finely diced 

1 pound ground beef 

One 15-ounce can diced fire-roasted tomatoes

One 15-ounce can kidney beans, drained and rinsed 

1/4 cup tomato paste 

2 tablespoons apple cider vinegar 

1 teaspoon brown sugar 

Kosher salt and freshly ground black pepper

4 hamburger buns 

Directions

  1. Heat the olive oil in a large skillet over medium heat. Add the onions and bell peppers and saute until softened, about 10 minutes. Add the beef, breaking it up with a wooden spoon, and cook until browned, 3 to 5 minutes. Add the tomatoes, beans, tomato paste, vinegar, brown sugar, and some salt and pepper, and cook until slightly thickened, 10 to 15 minutes.
  2. Serve warm on the hamburger buns.

I can see how some reviewers found this recipe to be not to their liking...it’s definitely a different take. That being said, I really enjoyed it for that reason. I jacked mine up with more veggies. Also, I didn’t have fire roasted tomatoes so I used a can of diced tomatoes with green chiles that brought some heat to the dish!This tasted even better after a day or so I’m the fridge! I’ll definitely make this again.
