Tropical Spice Cake

Ingredients

4 tablespoons butter, softened

1 cup sugar

1 cup molasses

1 cup half and half 2 eggs, lightly beaten

2 cups all purpose flour

2 teaspoons baking soda

3 teaspoons ground ginger

2 teaspoons ground cinnamon

1 teaspoon ground nutmeg

1/2 teaspoon ground allspice

1/2 teaspoon ground cloves

Powdered sugar, for finishing

Directions

  1. Preheat oven to 375 degrees. Use some of the butter to lightly coat a 9inch round cake pan. Place remaining butter in a mixing bowl and add the sugar. Beat well with a whisk until light and fluffy. Add the molasses and whisk well to combine. Slowly add the half and half, then the egg, whisking constantly to incorporate thoroughly. Sift together the flour, baking soda, and spices and add to batter. Whisk until just combined; do not overwork. Pour batter into the prepared pan and bake for 50 minutes or until a toothpick inserted in center comes out clean. Remove from oven and run a knife around the inside of the pan. Let cake cool in pan ten minutes then invert to remove from pan. Let cool completely and sift powdered sugar over the top to decorate.

This recipe was surprisingly good. It's dense with lots of flavor. I didn't have enough molasses to make a full cup, so I added dark corn syrup to make up the difference. Instead of baking it in a 9in baking round, I baked it in a bundt pan. After 50 minutes it was perfect. I don't know what the "Tropical" part of this is, but it was a big hit and I'll definitely be making it again.
