Manchego with Honey Brown Butter Sauce

Ingredients

1 stick butter

3 tablespoons honey

1/2 pound Manchego cheese wedge

Sea salt

Directions

  1. Melt butter in small saute pan, and cook until it turns a golden brown. Drizzle in honey and stir to incorporate. Pour over cheese wedge and sprinkle with sea salt.

Don't know what went wrong for me, but boy it went wrong.  I know how to brown butter, which I did before drizzling in the honey, but the butter separated with the oil floating to the top -- no amount of whisking could get it blended.  Did try draining some of the liquid butter oil, leaving the browned butter fats --- but still separated.  But disappointment -- at least our 'guests' were close friends, so we still enjoyed the wedge of cheese.  Not sure if i'll try making it again -- probably will because of the good reviews and it bugs me that it failed for me.
