Walnut Sausage Patties

Ingredients

1 1/2 cups toasted walnuts

1 1/4 cups rolled oats 

1 1/2 tablespoons maple syrup 

1 tablespoon brown sugar 

1 teaspoon dried sage 

1 teaspoon dried thyme 

3/4 teaspoon kosher salt 

1/2 teaspoon dried rosemary 

1/2 teaspoon cayenne 

1/4 teaspoon grated nutmeg 

2 pinches of crushed red pepper 

3 large eggs 

Freshly ground black pepper

Flavorless oil, such as canola or vegetable, for frying 

Directions

  1. In a food processor, pulse the nuts to a coarse crumb. Add the oats, maple syrup, brown sugar, sage, thyme, salt, rosemary, cayenne, nutmeg, red pepper, eggs and some black pepper and continue to pulse just until the mixture comes together into a thick batter. There should still be some coarse bits of oats and walnuts.
  2. Heat a generous layer of oil in a skillet over medium-high heat. Dollop 2 tablespoons of batter per patty into the skillet, allowing at least 1 inch between patties, flatten them slightly and cook until golden brown on the bottom, about 4 minutes. Flip and cook until golden brown on the other side, another 4 minutes. Transfer to a plate lined with a paper towel to soak up excess oil. Repeat with the remaining batter.

I’ve been trying to incorporate more vegetarian meals into our diet since my son started dabbling in it. These were very tasty. I made the recipe as written and didn’t think they were too dry. I did use fresh eggs from my hens and I think 2 of the 3 were a little larger than the standard large egg. I think that’s why they turned out a little more moist than others have commented. Next time I’ll up the seasonings a 1/4 tsp (except the cayenne and red pepper), add a 1/4 tsp fennel and make sure all three eggs are extra large.
