Yum Yum Brownie Muffins

Ingredients

1 (18 1/4-ounce) box devil's food cake mix

1 (15-ounce) can 100-percent pure pumpkin

Fresh berries, for serving, optional

Directions

  1. Preheat the oven to 400 degrees F.
  2. Pour cake mix into a large bowl and whisk to remove any lumps. Add pumpkin and stir until completely smooth and uniform.
  3. Cook's Note: Do not add any other ingredients that may be mentioned on the cake mix box, like eggs, oil, or water. The mixture will be very thick, so you might be tempted to add in other things to make the batter smoother. Do not do this!
  4. Place batter into a 12-cup muffin pan lined with foil baking cups and/or sprayed with nonstick spray. Place pan in the oven and bake until a toothpick inserted into the center of a muffin comes out clean, about 20 minutes.
  5. Allow to cool slightly and then serve. Garnish with fresh berries, if using. Enjoy!

My entire family is trying to eat healthier so I found this recipe for our Sunday night dinner.   Everyone loved them and with only 2 ingredients, they were so easy!!!    I will be making these again in the future.   However, I used cupcake liners and they stuck to the liners so next time, I won't use a liner but just spray the cupcake pan with cooking spray.   I also added a few chocolate chips after reading the reviews.
